Back to School :: Fall Quarter 2011

it's that time again...or should i say it was time again for back to school! the fall quarter started a little over two weeks ago!

but nonetheless, i love this time of year! even though tyson is always a student year round, he does get a nice little break before the fall quarter starts. so after a few weeks off of school and the start of the fall quarter, it always seems to bring the feeling of new excitement for the start of a new year/quarter!
i love going to the store and seeing all the school supplies and seeing new and returning college students shopping at Target with there parents! it makes me so nostalgic! i remember every new fall semester my parents were always with me, helping me move into my apartment, taking me shopping for all my college student needs. awe, those were the days! :)

we celebrated the first day of school with a 'back to school dinner'. a tradition we do every year! this year we ate at noodles and company (fancy, right?) and with a new year, comes a new family theme. this year our *family theme is...

we do believe that through FAITH our FUTURE is BRIGHT! no matter what!! i can't express how lucky we feel to have such loving family and friends who continually support us, pray for us, believe in us, and love us! with all this, combined with our strength as a family, we know that anything is possible!

happy back to school time! tyson is already loving his quarter and is making sure he makes it one of his best quarters!

Apple Picking :: Round Two


so the apples we picked the first time around were just so yummy that we ate them all up! so when friends of ours from church were going to go pick apples, brody and i were totally all about tagging along and getting us some more apples!

brody and i. i love him so! this time around brody was all about just running around with his little buddies and eating the apples. we had a really good time. i am so happy we get to enjoy such great adventures together.

Recipe :: Peanut Butter Oreo Ice Cream Pie

a little over a month ago, i made this (yum)! but when i saw this recipe that included all the things we love. i knew i had to try it! we love oreos. we love peanut butter. we love chocolate. and we love ice cream. and if you want to die and go to heaven - then you need to make this ice cream pie! this pie is amazing! and on top of that - it's so easy! E-A-S-Y!

Peanut Butter Oreo Ice Cream Pie

1 box Oreo Cookies
6 tbsp melted butter
2 cups cold heavy cream
1 (14 oz) Sweetened Condensed Milk
1/2 cup peanut butter
1/2 teaspoon vanilla extract
1 bottle Smucker’s Chocolate Fudge Microwave Topping

Finely crush about 25 Oreos in a food processor. Mix with melted butter and spread in the bottom of a 9″ round pan for the crust. Freeze for about 10 mins. Meanwhile, lightly crush the remaining Oreos into large pieces. Whisk sweetened condensed milk, peanut butter, and vanilla in large bowl and set aside. Whip the heavy cream to stiff peaks, then fold the whipped cream into the sweetened condensed milk mixture. Pour half of the peanut butter ice cream mixture on top of the frozen Oreo crust. Heat Chocolate Fudge according to the directions on the bottle, and pour half of the bottle in a layer over the ice cream. Add the remaining ice cream, hot fudge, and top with the Oreo cookie pieces. Freeze for at least 6-8 hours before serving. Serve with a scoop of whipped cream!

Apple Picking :: Round One


a couple of weeks ago we went to the apple orchard for apple picking. we went last year and knew it would become a tradition! we picked some super yummy crisp, sweet apples. we liked the 'courtland' apples the best! fall is starting to set it and we are so excited! ohio falls are the best!

it was a glorious morning and we all had a great time kicking off the first pick of the fall season. Let the games begin!
